How to Bake Organic Rainbow Cookies with Your Kids for St. Patrick’s Day

St. Patrick’s Day is right around the corner, and it’s time to channel the luck of the Irish! St. Patrick’s Day is a fun holiday to celebrate with kids, given the fantastical and whimsical notions that go hand in hand with the occasion: rainbows, four-leaf clovers, mischievous leprechauns (learn how to catch one here), and of course, the prospect of finding a pot of gold at the end of the rainbow.

One of my favorite ways to celebrate St. Patrick’s Day with my son by making a healthy meal that’s filled with greens the color of shamrocks. Then we top off the feast with a sweet treat: organic rainbow cookies! Learn how to make these sweet little treasures in and of themselves over at Inhabitots.
