Green Nosh: Vegan Blueberry Muffin Recipe

We’ve discussed before how blueberries are excellent at fighting free radicals! Not to mention they slow down age-related mental illnesses, lower your chance of getting a UTI, and reduces cancers and heart disease. So, what are you waiting for, make some vegan blueberry muffins stat!

Ingredients:

  • 2 c. organic whole-wheat flour

  • 1/3 c. organic sugar

  • 2 tsp. organic baking powder

  • 1/4 tsp. salt

  • 1 c. organic soy milk

  • 1/4 c. vegan Earth Balance spread

  • Egg replacer for 1 egg

  • 1 tsp. organic lemon juice

  • 1 c. organic blueberries

Preparation:

Preheat oven to 400° and lightly grease a muffin pan. In a large bowl, combine the flour, sugar, baking powder, and salt. Add the soy milk, vegan Smart Balance, egg replacer, and lemon juice and stir until well mixed.

Gently fold in the blueberries, then spoon the batter into the muffin tin, filling each cup about 3/4 full. Bake for 20-25 minutes, until muffins are golden brown.

Enjoy!
