I have a hard time grasping the fact that kids are starting to head back to school! At our house we have been getting into the back to school routine. We have started to go to bed early and are setting the alarm in the morning. We have picked out the perfect backpack, lunchbox and water bottle and have started to put together our homework station and we are just getting everything overall organized and ready to go.
Now that we have lunches planned, one of the biggest challenges for back to school is coming up with an assortment of healthy, nutritious and delicious snacks. I always want to pack goodies that aren’t only healthy, nutritious and delicious, but snacks that pack a brain power boost as well. I also like to focus on foods that are gluten-free and wholesome. A few weeks ago, we hosted a back to school bash for Eben’s closest friends and family members. We had planned to have a get together at the beach – however, the weather didn’t cooperate so we decided to move the party indoors!
We decided to share Target’s newest food collection – Simply Balanced. The collection is free from GMO’s, artificial colors, flavors and preservatives and forty percent of the collection is organic too. The collection offers almost 250 food products – everything from sustainable seafood and snacks to organic frozen fruits and beverages. We hit Target and picked up a selection of snack items – since we wanted to focus on goodies that parent’s could send back to school with their kiddos.
Our guests really loved the sparkling beverages, Parmesan Rosemary popcorn, freeze dried fruits, twisted fruit ropes and organic blue, yellow and white tortilla chips – however, the winner of the day was the frozen fruit lemonade that we whipped up for the kids using Simply Balanced frozen fruits and lemonade. Seriously, so good and perfect for a back to school get together.

Over the summer, our regular schedule goes out the window. Forget early to bed, early to rise — the only thing that is consistent in our home the entire summer is my family’s consumption of frozen treats! Right now, we have been a little obsessed with vegan sorbets, anything we can make in an ice cream churn, and fudgesicles. But then I thought, what would summer be without a classic orange creamsicle or two?
My son and I went to work modifying our favorite orange smoothie recipe into a vegan orange creamsicle. After a couple of tries, we think we got it just right. It is the perfect combination of orange and creaminess.
