A slow cooker can be a busy parent’s best friend — especially on busy school nights when you want to serve your family a hot meal, but have no prep time whatsoever. Slow cookers are capable of doing a lot more than just slow-cooking meat. There are delicious vegan meals you can make in your Crockpot or slow-cooker as well. The best part is, you can toss in all of the ingredients, set the timer and forget it, at least until dinner time. And after long school and work days, dishing up a home cooked, vegan meal that is ready and waiting is the perfect way to savor the evening without having to rush around trying to throw a last-minute meal together. Jump over to Inhabitots for ten delicious, vegan slow-cooker dishes (including desserts!) to add to your family’s menu. These dishes are perfect for fall and will warm up your family on all of those cool autumn nights.

This school year, I wanted Eben to pack his own school lunch. I wanted the process to be simple and fun, so I created a lunchbox packing station in our kitchen. This project is super simple, since you probably already have the supplies. The best part? Eben eats everything that he packs, and he is learning responsibility and how to make healthy choices on his own.
To get started, jump over to Applegate – you will be happy to have a few extra minutes each school morning!
