Mr. Sweet Greens brought home a huge bag of miniature organic cucumbers from the farmer’s market. Now, what to do with all of those cucumbers? Then, I thought back to my childhood and remembered my grandma marinating cucumbers and onions in vinegar. And I loved them! So, we quickly whipped up a jar of yummy miniature cucumbers marinated in vinegar to snack on – and you can too. What you will need:
– Miniature or regular sized cucumbers
– Organic white, red or balsamic vinegar
– Sea salt and organic pepper
Directions:
1. Slice the cucumbers into desired sized slices, place into a jar.
2. Pour organic vinegar into the jar, until all of the slices are covered.
3. Salt and pepper to taste.
4. Let them marinate overnight.
5. Enjoy and then add more slices to marinade – over and over again!
