Green Nosh:: Sour Cream Sugar Cookies

Whenever Eben has a day off of school, we plan on making something together in the afternoon. We may do arts and crafts, draw, paint or bake goodies. This week, we made sugar cookies and they tasted delicious and were fun to decorate. Baking with your children is always fun because you get to chit chat while mixing the ingredients and learn something new about each other.

Do you want to make some yummy sugar cookies with your little ones? These are also great for all of those upcoming holidays.

Here is what you will need::

Sugar Cookies
{Makes 2 dozen}

Ingredients:

* 2 Cups Organic Flour
* 1 Tsp Organic Baking Soda
* Pinch of Salt
* 1/2 Cup Smart Balance Butter Spread
* 3/4 Cup Organic Sugar
* 1 Tsp. Organic Vanilla extract
* 1 Organic Egg or egg replacer
* 1/2 Cup Organic Sour Cream {You cold also use soy milk}

Directions:

1. Preheat oven to 375°F.

2. Combine flour, baking soda, and salt in a bowl and mix together. Cream the butter in a stand mixer then add sugar until well blended. Add vanilla and the egg and 1/2 of the flour mixture. Add the sour cream, remaining flour and a little more sour cream if necessary and mix on low/medium speed.

3. Form into round balls and then flatten with your palm onto the cookie sheet. Bake for 10 minutes and let cool on cooling rack for 2 minutes.


Icing::

Ingredients:
* 2 Cups Organic Powdered Sugar
* 1 Cup Organic Sour Cream
* 1 Tsp. Organic Vanilla Extract
* Organic Food Colorant

Directions::

Mix all ingredients together with a hand mixer. Once cookies have completely cooled, you can add icing and decorations. {We used a hodge podge of decorations that we had in our pantry.}

These cookies are super yummy and will keep for about a week in a covered container…they won’t last a week though, I guarantee it.

    My daughter and I made these for Halloween. I used a vegan buttercream icing recipe. I made these completely vegan by subbing 1/4 cup of water w/1 tablespoon of milled flax seeds for the egg. I also used Tofutti sour cream to replace the sour cream and instead of vanilla, I used almond, which was divine! Oh and I used Earth Balance instead of Smart Balance. I will have to send you some pictures.
