Sweet Greens Turns 1.

Guess what? Sweet Greens turns 1 today. How fantastic is that? I can’t believe how quickly the year flew by.

I want to thank all of my lovely readers, facebook fans, twitter followers and sponsors. You have made the past year a ton of fun. I am glad that we are learning to live a greener lifestyle together and I look forward to another lovely year with you.

How about you lovely readers, what has been your favorite part of the last year? Are there things that you would like to see more of, or less of on Sweet Greens in the following year? Should we start a green book club? an exercise club? a garden club? Send me your ideas for the coming year, I would love to hear about them.

Day Trip:: Mount Princeton Hot Springs.

We had a super fun time at the 2010 International Snow Sculpture Festival. However, my favorite part of the weekend was when we arrived at the Mount Princeton Hot Springs Resort. The ever so lovely Mr. Sweet Greens had booked us a night at this lovely mountain top hot springs and inn and it was fantastic.

The drive to Mount Princeton was lovely, full of trees, deer and big horned sheep. When we arrived, I was ready to soak the day away in the hot springs. I wasn’t sure what to expect, however I was hoping that it would be comfy and hot. I was very, very surprised and delighted to find that the hot springs are in the river. Yes, you heard me right, in the river. Can you imagine? It was perfect. There were a dozen or two hot pots all along the river, that were the perfect size for sitting or laying and soaking. We had the most amazing time, lounging in the river. The combination of steaming hot water with small spot of cold, were fantastic. Eben had a blast exploring the rocks and climbing up and down the rocks to get to the springs. There is something magical about being outside in super cold temperatures, yet perfectly happy in the lovely hot river. Delightful.

This is the view that I woke up to on Sunday morning. Mr. Sweet Greens checked us into the cliffside lodge, complete with king sized bed with a fluffy duvet and 8 pillows. Heaven.

I have visited several, and Mount Princeton Hot Springs are by far my fave. We are planning to go back in the spring so that we can hike, bike, fish and take Eben river rafting. Doesn’t that sound fun?

Day Trip:: Breckenridge, Colorado.

We are back from a lovely, lovely weekend that Mr. Sweet Greens planned for our family. The weekend was full of fun and relaxation. We woke up bright and early and drove the 2 1/2 hours to Breckenridge, Colorado. Breckenridge or as locals call it, ‘Breck‘ is a lovely little ski town full of fun things to do, including skiing or riding.

Mr. Sweet Greens and I snowboard and Eben is learning how to ski, however this was a weekend planned solely around relaxation so we didn’t hit the slopes. Instead, we went to Breckenridge to walk around the quaint little town, have lunch and stroll throught the 2010 International Snow Sculpture Festival. Teams from around the world started working on these snow sculptures last Tuesday morning and the results were fantastic.

It was a fun way to spend the morning and Eben especially enjoyed all of the artwork. We had several favorites, it was hard to choose. Which were your favorites? You can see more pictures here.

Love at Little Lark

When I saw these tee shirts from Little Lark, I wondered if they were made especially with Eben in mind. He would go crazy over this shirt, he has a major Star Wars thing going on right now. And by right now, I mean for the past 4 years. Personally, I would like the owl shirt in my size please.

And don’t even get me started on the fabulous heart pillow. Wouldn’t it look adorable amongst the throw pillows on my sofa. And all of it organic. Really? Fantastic.

Vegan Valentine’s Day Goodies from Pattycake Bakery

Are you planning on giving that special someone you love a little treat this Valentine’s Day? Or does your special someone want a treat that doesn’t hurt the environment? Is your sweetie vegan? Do you have a chocolate love, cookie monster or muffin fanatic on your Valentine’s Day List?

If so, then Pattycake Bakery is your sweet treat spot. We recently received a box full of goodies from The Pattycake Bakery and our initial thought was that the treats looked delicious. And guess what? They tasted even better than they looked. Eben and I really, really enjoyed the Seriously Good Chocolate Cupcake, it was, well, Seriously good. It was definitely the best chocolate cupcake I have ever tasted. This cupcake is huge, moist and has the most lovely rich chocolate frosting. Heaven in a cupcake, really. We also loved the conversation heart cut out cookie. Again this cookie was very moist and yummy. I also love the messages on the cookie, especially the I {heart} your mustache cookie. How fun is that?

Eben is an absolute muffin man so the Marry Me Blueberry Muffin and Pumpkin Walnut Muffin were definitely his thing. They are large, fluffy and fantastic.
