This Week’s CSA Box – It’s What’s For Dinner!

I mentioned that in October we joined our local CSA via Kai Kai Farms. We have been more than happy with our membership and would highly recommend it to anyone! This morning, the mister picked up our share, and I decided that I would start to snap a couple of photos of it and then share all of the ways that our family will enjoy it for the next two weeks.

Check out what is in this week’s box:

  • lettuce
  • broccoli
  • spinach
  • cauliflower
  • peppers
  • squash
  • strawberries
  • tomatoes
  • peas
  • carrots
  • eggplant
  • beans

Now, I have a question for you – eggplant, what are your tried and true recipes for eggplant? I would love to hear your recipes and suggestions.

    My family and I have been part of a local CSA for the past couple of years and we, too, love it! It’s so fun going to pick up our box and seeing what goodies are inside ^.^

    As for eggplant, I’ve not attempted to make anything with it (yet), however you can never go wrong with a good grilled eggplant!

    I always love egg plant parm. Hubby made sandwiches last week, eggplant sauteed a couple of minutes each side till brown, slices of tomato, red onion,and spinach leaves on wheat, pan toasted with dijon mustard. Pretty tasty.

    Hi Tanya,

    That is the one recipe that we use over and over again for eggplant! We love it too! We also serve it over whole wheat organic spaghetti. So good – I will have to try the sandwich, thanks for the tip.

    I love that you are getting strawbeerries and tomatoes in January. I subscribe to a CSA in San Diego and we are getting tons of leafy greens and root veggies right now…can’t beat the oranges though.

    Hi Suzanne, I know, isn’t it funny! It is definitely strawberry and tomato season here! The tomatoes on our patio are going crazy.
