Gluten Free Chocolate Chip Cookies Recipe – by Guest Greenie Nisrine Merzouki

This is Nisrine last recipe with us – I want to take this time to thank her for contributing her five fantastic articles to Sweet Greens’ Guest Greenies segment.
These cookies are so chewy and delicious it’s hard to tell they’re gluten-free. Plus, they are organic to boot!

Ingredients
– 2 cups organic brown rice flour
– ¼ cup organic corn starch
– 1 teaspoon organic baking soda
– 1 teaspoon organic salt
– 7 ounces organic unsalted butter, softened
– 1 ½ cups organic brown sugar
– 2 large organic eggs
– 1 teaspoon organic vanilla
– 12 ounces organic semisweet chocolate chips

Directions
1. Preheat the oven to 375º. Line a cookie sheet with Eco-friendly parchment paper. Combine the brown rice flour, corn starch, baking soda and salt in a large bowl.

2. In a separate bowl, cream the butter and sugar. Whisk in the eggs and vanilla, and pour over the flour mixture. Combine well using your hands and mix in the chocolate chips. Cover with a plastic wrap and refrigerate for at least 30 minutes until the dough is firm.

3. Shape the dough into small balls and place them on the cookie sheet, about two inches apart. Bake them until golden, 11 to 12 minutes.
 
Yield 20 cookies.
