Fresh Every Day of the Year.

A lot of you have been asking me for more fab vegetarian and vegan dishes. Well, meet my newest blog obession fresh365. Fresh365 is an amazing blog devoted to seasonal, organic and local vegetarian and vegan meals. The creator Erin is from Boston and is inspired by food, photography, travel and style. She hopes you will find inspiration at fresh365 to taste new foods, explore unique places and share simple recipes and laughs with family and friends. Tomato Panzanella

Ingredients::

Croutons::
3 c Italian bread cut or torn into 1ā€ pieces
olive oil
salt and pepper to taste

Salad::

4 large tomatoes cut into wedges
14-oz can artichoke hearts, drained and coarsely chopped
*1 c pitted kalamata olives, coarsely chopped
1/2 c coarsely chopped fresh basil leaves
3 T coarsely chopped fresh mint

Dressing::
1/3 c olive oil
1/4 c white wine vinegar
1 large garlic clove, minced
1/2 t salt
1/4 t pepper

Directions::

Place the bread on a baking sheet, drizzle with olive oil and sprinkle with salt and pepper. Broil 2-4 minutes, until golden brown. Remove from oven, and transfer to a large bowl. Add the tomatoes, artichokes, olives and basil. Toss to combine.In a small bowl, combine all dressing ingredients. Stir well, and drizzle over the salad. Toss, and season to taste with salt and pepper. (Dish can be prepared ahead of time, with croutons added just before serving).
*substitution: 15.5-oz can cannelloni beans, drained and rinsed

Serves 4.

Have a Lovely Green Weekend + The 12 Days Of Etsy

Hello all my lovelies. Hasn’t it been a fabulous week? Did you get a chance to enter all 25 of my Green Holiday Giveaways? If not, don’t worry you have until December 11th to enter. What did you think of the sponsors and the giveaway prizes? What were your favorites?

This weekend is stocked full of fun stuff at The Sweet Greens Home. This afternoon I am having lunch with the fabulous Mr. Sweet Greens, followed by an evening of make your own pizzas with Eben and his best friend. Tomorrow afternoon, we are taking Eben to do his holiday shopping, see the holiday lights and for a stroll around our little old town. Sunday is going to start with a lovely hike and warm lunch in the mountains. We are going to our favorite sustainable mountain farm to hike and pick a holiday tree. {It turned out to be too snowy for a hike so we decided to purchase a potted tree this year that can be planted in our yard.} Sunday evening will be spent holiday decorating, listening to holiday music, sipping hot cocoa by the fire, present wrapping and since it is snowing, sleigh riding. We start to celebrate our holiday festivities on the 11th.

Organic Pumpkin Cheesecake Recipe

Do you need a last minute recipe for a fab Thanksgiving dessert? My organic pumpkin cheesecake is easy to make and if you start now, it will be ready for dessert after your Thanksgiving feast.

Ingredients
Crust::

2 cups organic graham cracker crumbs
3 tablespoons organic brown sugar
1/2 teaspoon ground organic cinnamon
1/2 cup Smart or Earth Balance butter spread
Filling::

3 (8-ounce) packages organic cream cheese
1 (15-ounce) can pureed organic pumpkin
3 eggs plus 1 egg yolk {or egg substitute}
1/4 cup organic sour cream
1 1/2 cups organic sugar
1/2 teaspoon ground cinnamon
1/8 teaspoon fresh ground organic nutmeg
1/8 teaspoon ground organic cloves
2 tablespoon organic whole wheat flour
1 teaspoon organic vanilla
Directions

Preheat oven to 350°
To make the crust::

Combine graham cracker crumbs, sugar and cinnamon. Add the melted butter. Press down flat into a 9-inch spring form pan. Set it aside.

To make the filling::

Beat cream cheese until smooth. {I do this in our stand mixer} Add the pumpkin puree, eggs, egg yolk, sour cream, sugar and the spices. Add flour and vanilla. Beat together until well combined and not lumpy. Pour into crust.
Spread out evenly and place oven for 1 hour. Remove from the oven and let sit for 15 minutes. Cover and refrigerate for 4 hours. It is super yummy served with homemade vanilla icecream.
