Secret Spring Hiking in South Florida

We love to spend at least one day of our weekend each week hiking or biking. I know that Florida is known for it’s amazing beaches – but the hiking and biking here is really fantastic too! We recently visited a private nature preserve that the mister was able to get access to. It was so peaceful and quiet, we didn’t see a single person the entire time that we were there. We did see a couple of deer and a fawn too.

I am pretty sure that Eben and Noodles had the most fun though – we stopped to have lunch in a large open meadow and the two were so funny. Eben would hide in the tall grasses and call Noodles name, she would search and search until she found him. Then, she would give him a kiss and run back to the mister and myself. It was adorable!

Do you have your favorite secret places to hike or bike? I would love to hear about them!

Have a Lovely Spring Weekend + A Few Green Things

Hello, Friends! Are you enjoying springtime? Have you been enjoying Passover or looking forward to Easter? We have been enjoying our spring break together – spending every day biking, or at the beach, it has been amazing. I hope that wherever you are, the weather is nice or at least bearable!

Today is Day 6 of our juice fast – and while it hasn’t been easy, I have learned a few things in the past week.

  • I was majorly addicted to sugar and bread
  • Not eating has been much easier than expected
  • I don’t miss my morning cup of coffee
  • Not eating makes you feel cold all of the time, especially at night
  • I do like and can drink juice as my only food
  • Losing 9.9 lbs in 6 days feels good (the mister lost 12)
  • The misters rash is going away

Tonight, when the mister gets home instead of having wine and cheese – we are going to juice cantaloupe, strawberries, grapefruit and lemons – then, blend it with ice! I am looking forward to it.

While I scour Pinterest for more juicing recipes, here are a few green things you might enjoy:

– Love these natural Easter egg dyes for the weekend.
– Dull hair? Restore it with a DIY avocado mask.
– 18 reasons why doctors and lawyers home school their children. Interesting!

Happy Passover or Happy Easter! I hope you have an amazing weekend with your family – I am sending sunshine your way. See you back here on Monday!

How to Bake Vegan, Organic, Whole-Wheat Snickerdoodle Cookies

A surefire way to encourage a bonding session with Eben is to bake something with him. It’s a great way to get him all to myself for several minutes, and for whatever reason, he always seems to open up to me when we are baking. I get the 411 on all the goings-on in middle school, and the latest and greatest updates in teen novels too!

Last night, I was eager to try to make a vegan snickerdoodle cookie. Snickerdoodles have always been one of my favorites, and to make a healthier version was on my must-do list. This recipe is great to make with children because they will especially enjoy rolling the cookie balls in sugar and cinnamon and licking their fingers too. You can click here for the printable recipe and jump over to Inhabitots read on to get started making vegan, whole-wheat snickerdoodle cookies with your kids.
