Our First Full Day Home for Summer Break

Since school ended last Thursday, today will be our first full day home together. Isn’t that exciting? I modified my schedule so I will be finished with my business work, housekeeping and my hour long workout before Eben wakes up. Yes, this means getting up super early, but isn’t it worth it? From 9 am on, it is all about Eben and Mom time and I just found out that 3 days a week, Mr. Sweet Greens will be home before lunchtime. Yay!

Today is going to be a pool day, no plans, no schedule, just going to swim in the pool until Eben has had enough. I could be there until tomorrow with this plan, he never says he has had enough. I will remember to bring a good book.

DIY: Make Your Own Simple Summer Hammock

How was your Memorial Day weekend? We had a fantastic time and I am excited to share all of the details with you. (Hopefully tomorrow or Thursday because I have to go through all of the photos.) While on our family camping adventure, the fact that we needed a camping hammock kept coming up. We love laying in our hammock at home and the thought of the breeze swinging us back and forth was teasing me.

This morning, I saw these easy to follow steps to make a simple hammock. And to think that I already have a huge blanket and rope in the camper. I could have made a hammock this weekend. No fair.

Have a Lovely Green Memorial Day Weekend

This is where we are spending Memorial Day weekend

Hello Lovely Readers,

Aren’t you so excited that it is Memorial Day weekend? Yay! Mr. Sweet Greens, Eben and I are getting ready to leave for our Memorial Day weekend family camping trip. We are going to Steamboat for four days full of fun. There will be nature hikes and lounging in the canoe in the mornings, hot dog and marshmallow roasting in the afternoon and soaking at Strawberry Hot Springs in the late afternoon. However, after looking at the pictures of Strawberry Hot Springs (I have never been there), maybe I will just soak the entire four days! The pictures look fantastic and I can’t wait to get there! I have a huge crush on hot springs and Mr. Sweet Greens always tries to incorporate a visit to them on all of our vacations for me. (I could write a book on fantastic hot springs, since we have been to so many.) Can you tell I am excited? Mr. Sweet Greens is awesome, he always plans the most fabulous trips! I think it is the perfect way to kick off summer vacation. Don’t you agree?

Memorial Day Vegan Pancake Breakfast

This memorial day weekend, why not surprise your family with brunch on the patio. I love brunch, it is my favorite mealtime. I especially love when brunch is served outside and enjoyed in the sunshine. Isn’t it fun to sip mimosas while chatting with your loved ones?

Looking for a fabulous vegan pancake recipe, here you go. You are welcome!

Ingredients:

1 C. organic unbleached flour
2 Tsp. organic baking powder
1/2 Tsp. salt
3 Tbsp. organic sugar
1 Tsp. organic all natural vanilla
1 organic egg replacer
1 cup organic soy milk
2 Tbsp. organic veggie oil

Directions:

Mix wet ingredients in bowl. Mix dry ingredients in a separate bowl. Pour wet ingredients into dry and mix well. Drop onto medium heat pan. Flip until cooked completely through and golden brown. Serve with vegan buttery spread and maple syrup.
