Hodgson Mill: Build A Better Organic Pizza Contest: Focaccia Recipe + Giveaway

Fall means that at least a couple of times a month, Saturday night becomes pizza night! It is always so much fun to spend the time together making and rolling out the dough, adding the fresh ingredients and enjoying piping hot pizza fresh from the oven! It is one of our favorite family activities.

I like pizza don’t get me wrong, but what I really love is focaccia. It’s hands-down my favorite and I will ALWAYS choose it over pizza. So, when Hodgson Mill sent us organic flour and yeast – the mister went to work baking a super yummy focaccia for me. I thought it would be fun to submit our focaccia recipe into the Hodgson Mill Build a Better Pizza Contest, since it is much more unique than a traditional pizza. What you will need:

  • 1 1/2 cups Hodgson Mill organic white flour
  • 2 cups Hodgson Mill whole-wheat flour
  • 1 whole packet Hodgson Mill yeast
  • 1 tablespoon organic olive oil
  • 1 teaspoon salt 
  • 1 teaspoon organic sugar
  • 1 1/2 cups warm water
  • organic garlic powder
  • organic dried oregano
  • organic Parmesan

Step 1: Preheat oven to 500°, place pizza stone in oven. In a large bowl, dissolve the sugar in warm water. Sprinkle the yeast over the top, and let stand until the yeast starts to bubble.

Step 2: In your stand mixture, use your dough hook to mix the olive oil and salt into the yeast mixture and add the wheat flour and 1 cup of the white flour until a large bowl forms.

Step 3: Use the remaining flour to sprinkle onto a surface, then knead the dough ball for a few minutes. Place the dough in an oiled bowl, and turn to coat the surface. Cover with a towel and let stand in a warm place for an hour.

Step 4: Drape the dough over your fists and gently pull the edges downwards, while rotating. When dough has reached the desired size, place on the pizza stone.

Step 5: Drizzle with organic olive and sprinkle with salt, organic garlic powder, organic oregano and organic Parmesan.

Step 6: Bake for 7 minutes or until crust is crisp and starting to brown. Enjoy!

Have a Lovely Green Weekend + A Few Green Things

Hello, Friends! How was your week? Are you enjoying the lovely fall weather where you are? It is still super-duper hot here in Florida – I really wish it would cool off. But I won’t complain because we can always go to the beach! The mister and I are getting ready to drive to Miami to pick up a close friend who is visiting from Seattle. I can’t wait! It’s always fun catching up with old friends, agreed?

Then, on Sunday afternoon, we are going to decorate for Halloween. Yay! for spooky spiders, flying ghosts and grimacing pumpkins. While I browse my Halloween + Fall Pinterest board for inspiration, here are a few green things I thought you might enjoy:

– Singapore’s Garden by the Bay looks fantastic! It’s on my travel wish list!
– I love this concept for a cyclist powered bus!
Sunset Magazine’s Pinterest boards make me yearn for the west again!
– These maple scones would be fantastic for brunch this Sunday.

– Did you know Sperm Whales sleep “standing up”?
– If you have leftover chicken-wire these ghost-like creatures would be an amazing project.
Painted pumpkins make me smile!

Gallatin National Forest: Waterfall Hiking

A large chunk of our fall family trip to Montana including hiking trips! I have to admit, these were my favorite parts of the trip – I could hike all day, everyday! The first hike that we took when we arrived was in the Gallitin National Forest. We packed the bear spray and reusable water bottles and set off for the day! Take a peek at our adventure.

–The happy hikers include: River, Shad, McKenzie, Eben, Jayson + Me!

River and Eben couldn’t resist crossing the river every time we came across a fallen tree! Can you blame them?

We also came upon a huge hillside covered with large chunks of rock that had fallen off the face of the mountain. Once again, the kids wanted to explore!

P.S. The morning of our fall family trip, we left for the airport at 2 a.m.! Eben was suppose to put on his Keen sandals on our way out the door, instead he put on his Crocs. I didn’t notice until we were going through security at the airport. 

During this first hike, he tumbled down a small section of the mountain when we hiked down. I was terrified – he wasn’t hurt, not a scratch! But, after that first hike – we made him wear his sneakers the rest of the trip. Lesson: Hiking shoes are super important – don’t forget yours!

Montana White Water | Gallatin River Zipline Tour

When we arrived in Bozeman, Montana for our fall family trip, our friends (Shad + Cammie) surprised us with a Gallatin River Zipline Tour!

The tour consists of 3 sky bridges, 2 tree platforms and 3 zips. Zip #1 is the shortest line, which prepares you for what is ahead! Zip #2 sends you flying across the Gallatin River on the longest line which is almost 800 feet! Then, the final zip sends you across the river again for the finale.

This is what the mister had to say about the tour:

“It was very fun and in a beautiful location! The staff was very friendly and helpful – they teach you quickly how to zipline safely, while allowing you to be daring at the same time! I recommend doing all 5 ziplines – because once you start, you don’t want to stop!”
