As a kid growing up in the 80’s, I loved to skateboard. I still remember my hot pink panther board – it was my favorite thing! To this day whenever we pass the skate park, I have to stop and reminisce – hoping that Eben will take up skateboarding, soon!

Tomato Panzanella
Ingredients::
Croutons::
3 c Italian bread cut or torn into 1” pieces
olive oil
salt and pepper to taste
Salad::
4 large tomatoes cut into wedges
14-oz can artichoke hearts, drained and coarsely chopped
*1 c pitted kalamata olives, coarsely chopped
1/2 c coarsely chopped fresh basil leaves
3 T coarsely chopped fresh mint
Dressing::
1/3 c olive oil
1/4 c white wine vinegar
1 large garlic clove, minced
1/2 t salt
1/4 t pepper
Directions::
Place the bread on a baking sheet, drizzle with olive oil and sprinkle with salt and pepper. Broil 2-4 minutes, until golden brown. Remove from oven, and transfer to a large bowl. Add the tomatoes, artichokes, olives and basil. Toss to combine.In a small bowl, combine all dressing ingredients. Stir well, and drizzle over the salad. Toss, and season to taste with salt and pepper. (Dish can be prepared ahead of time, with croutons added just before serving).
*substitution: 15.5-oz can cannelloni beans, drained and rinsed
I love when jewelry is more than just a beautiful bauble that looks fabulous when I am wearing it. Mr. Sweet Greens and myself are celebrating our 10 year wedding Anniversary today. I can not believe that we have been married for this long, it seems just like yesterday that we said, “I do.” I have been very fortunate to not only find a loving and wonderful husband and father, but my best friend. It is lovely to be married to someone who shares your ideals, dreams, challenges and accomplishments. Our marriage is simply, the most fun that I have ever had in my life and I look forward to many, many more wedding Anniversaries together.
We have a lovely evening in planned, Jayson is doing all the cooking {naturally} and I will be in charge of the ambiance.
